Turkey Thai Coconut Curry
This was such a quick, easy and delicious dinner!! This recipe you can add chicken, turkey or even tofu.
We had left over turkey from Christmas dinner so I used that! So simple to just reheat left over meat.
What you need:
1 tbs of olive oil
1/2 cup onion (diced)
1/2 cup orange bell pepper (diced)
1 cup peas
1 box whole wheat spaghetti
Chicken, Turkey or Tofu
2 packages of Thai Coconut Curry
Boil water in pot for spaghetti and put the noodles in until done.
In a large skillet add a tbs of Olive Oil on medium heat. Once warm add 1/2 cup of diced onion (if you are cooking chicken and raw meat after the onions have become Caramelized). Then add 1/2 cup orange bell pepper (diced). Once bell pepper are somewhat soft add In 1 cup peas. Add Left over meat or tofu. Then pour in 2 packets of Thai Coconut Curry. Cover and Let simmer until peas are done.
Once it's all finished pour sauce over over noodles and serve!!
